There are thousands of 'ones' in the Bible since one is a pronoun, too. I've selected some of what I thought were the more representative.
One as creation: Genesis 1:9And God said, "Let the water under the sky be gathered to one place, and let dry ground appear." One represents the God Jehovah and becomes the Christain number of singularity or unity. One represents a Father

One is a hermaphrodite number. When added to even numbers, one makes them odd, when added to odd numbers, one makes them even.
One represents what is first.
One often symbolizes reason, but it is also recognized as chaos.

Negative connotations of one:
solitary, loneliness;homeless, kinless, unassisted, alone, monotony, one-sided, egotistical, lacking dimension and depth
Tarot divination:When upright the magician's card represents the active principle of life or consciousness and shows the willingness to master, organize, or create something. The individual's ability to utilize divine power with the desire to achieve creation. In the reverse position it indicates a weak will, indecision, or incompetence. In some cases it indicates an evil desire to use power for destructive purposes.
Symbols of One:
The sun which governs spirit, will, energy, vitality, wholeness,self-integration, ruling authority, organization and power. It also represents the will to live.
